Given it's high gluten and protein content, hard reds are typically used for hearth breads, pizza and other recipes calling for high strength dough. They impart a deep nutty aroma and rich taste.
One cup of hard red contains 24g of protein, 23g of fiber, and is rich in vitamin B, magnesium, zinc and other minerals.
Typical varietals of this wheat are Yecora Rojo, Rouge de Bordeaux, Red Fife, and Joaquin Oro.
