Used for delicate baked goods, such as pastries, biscotti, sponge cakes or scones. It has a milder taste than hard red, and contains less protein.
One cup of soft white wheat contains 18g of protein and 21g of fiber, as well as Vitamin B, zinc and niacin.
Typical varietals of this grain are Sonora, Frederick, Blanc de Mars and Wit Wolkoring.
